“Back to school season is always hectic, and we want to make your life in the kitchen as seamless and easy as possible. The Mexican Beef & Corn Casserole is the quick and delicious go-to meal to whip up for the hectic school & work week.” I was really excited to receive our 2nd edition of the casserole club from Country Crock. We were sent the above items ( Mexican Corn, Low Sodium Black Beans, Oven Mit, Spatula, Cheese Grater) and asked to recreat the Mexican Beef & Corn Casserole and add our own twist to it.
I love Mexican Food and this is the perfect addition to my recipe file! I decided to cut out the sour cream, add extra cheese and serve it with tortilla chips and wallah the Mexican Beef & Corn Nachos was born!
My family in general are not big casserole eaters BUT they all loved this! I think it was the extra cheese and the crunch of the tortilla chips that did the trick!
Ingredients:
- 1 lb. lean ground beef
- 1/3 cup chopped fresh cilantro, (optional)
- 1 can (15.5 oz.) reduced sodium black beans, drained
- 1 can (11 oz.) Mexicorn, drained
- 2 Tbsp. Country Crock® Spread
- 1/2 cup salsa- i used a super non chunky Taco Sauce instead
- 2/3 cup fat free sour cream (optional) in my recipe i eliminated
- 1/4 cup shredded low fat cheddar cheese ( I didn’t measure mine I just did as much as I wanted)
- all on top of yummy tortilla chips
Directions:
- Preheat oven to 400°. Cook ground beef in 12-inch nonstick skillet over medium-high heat, stirring frequently, until beef is done, about 5 minutes. Remove from heat, then stir in cilantro.
- Combine black beans, corn and Country Crock® Spread in 8-inch baking dish. Top with beef mixture; spread with salsa and sour cream and sprinkle with cheese.
- Bake 20 minutes or until heated though and cheese is melted. Cost per recipe*: $ 8.20 Cost per serving*: $ 1.37 *Based on average retail prices at national supermarkets.”
I decided to let my girls try it first since they are the hardest to please and I got a YUMMMY for each of them! This would be the perfect dinner for after school or it would even work as an after school snack. One thing I would also add when I do this recipe again is to add avocado onto the nachos since I LOVE it!
