I often struggle to find ideas for things to make for dinner. I am not super creative food wise and my girls are pretty picky eaters. I was really excited to try out the Easy Mac & Cheese Veggie Chicken Casserole with my twist on it! Country Crock was nice enough to send me all the ingredients except for the veggies and chicken.
“Easy Mac & Cheese Veggie Chicken Casserole
Ingredients:
- 4 Tbsp. Country Crock® Spread, melted, divided
- 1 cup 2% milk
- 8 ounces dry rotini pasta, cooked and drained
- 2 cups diced cooked chicken
- 4 cups assorted frozen vegetables, thawed
- 2 1/4 cups finely shredded low fat cheddar cheese
- 1/4 cup plain dry bread crumbs
- 1 Tbsp. grated Parmesan cheese
Directions:
- Preheat oven to 400°. Combine 3 tablespoons Country Crock® Spread, milk, rotini, chicken, vegetables and cheddar cheese in 8-inch baking dish.
- Combine bread crumbs, Parmesan cheese and remaining Spread in small bowl; sprinkle over top of casserole.
- Bake until heated through and crumbs are toasted, about 30 minutes.

Well I decided to put my own fun, yummy twist on it and it worked! I decided to omit the veggies and chicken and added extra cheese, bacon, and used 1% milk instead of 2%. We also had grilled chicken on the side instead. 
I gathered all of my ingredients and set to work. The whole process took about 45 mins because of cooking the noodles and putting everything together. I was really pleased how our yummy casserole side dish came out! 
I decided to call my Country Crock Casserole: Cheesy Bacon Mac & Cheesy. The girls loved it and couldn’t wait to eat it all! Country Crock has many different types of butter and I love them all!
