Easy Cheesy Breakfast Tacos

2 Tbsp Olive Oil

1/2 Tbsp Minced Garlic

2 or 3 Medium Potatoes, peeled and diced

6 Nellie’s Free Range Eggs, beaten

1 cup sausage crumbles or crumbled bacon

Generous handful of shredded Cabot Vermont Extra Sharp Cheddar, more for garnish

Salt and Pepper

Flour Tortillas

Your Favorite Breakfast Taco Toppings: Avocados, Salsa, Hot Sauce, Guacamole

Heat olive oil over medium heat in a large frying pan. Add garlic and diced potatoes, cook until soft.
Add Nellie’s Free Range eggs and uncooked/cold sausage crumbles to the pan, stir lightly and scramble around potatoes until eggs have set. Season to taste with salt and pepper. Add meat after eggs have set if using fully cooked and warm meat of choice.
Sprinkle a generous handful of shredded Cabot Vermont Extra Sharp Cheddar to taste, stir in.
Serve immediately in flour tortillas, adding your favorite taco toppings
