My family loves Country Crock, I have been excited to share these last few months all of the fun recipes and casseroles that you can make using Country Crock and a few other items! I received a great box from them which included Panko Bread Crumbs, a knife and a yummy Veggie Casserole Recipe! What I love about Country Crock is that it can be used in anything! My motto is Butter makes everything…better of course! So the idea that Country Crock had was for a yummy Veggie Casserole which I of course put my own spin to it. My kids are not huge veggie eaters, so I didn’t want to shock them with new veggies. So I decided to just use a basic veggie like carrots and go from there.
Recipe from Country Crock:
Ingredients:
- 1/2 cup Country Crock® Spread, divided
- 2 cups chopped onions
- 3/4 cup panko bread crumbs
- 8 cups cooked mixed vegetables (broccoli and cauliflower florets, red pepper and/or green beans)
- 1 1/2 cups shredded 2 % cheddar cheese, divided
Directions:
- Preheat oven to 375°. Melt 1/4 cup Country Crock® Spread over medium-high heat in large nonstick skillet and cook onion, stirring occasionally, until golden brown, about 8 minutes. Stir in bread crumbs and cook, stirring occasionally, until lightly toasted, about 2 minutes; remove to bowl.
- Melt remaining 1/4 cup Spread in same skillet and add vegetables; toss to coat. Pour 1/2 into shallow 2-qt. baking dish. Sprinkle with 1/2 of the cheese and 1/2 of the crumb mixture. Repeat with remaining ingredients.
- Bake until heated through and cheese is melted, about 25 minutes.
- TIP: Thawed frozen vegetables or canned vegetables can be used instead of fresh.
So my Recipe was a bit different. I decided to cook less of it since there are only 4 of us eating it so I just halved everything!
Cheesy Country Crock Carrots
- 1/4 Cup Country Crock® Spread, divided

- 4 Cups Cooked Carrots
- 3/4 cups shredded Colby Jack Cheese, divided
- Preheat oven to 375°. Melt 1/8 cup Country Crock® Spread over medium-high heat in large nonstick skillet and Stir in bread crumbs and cook, stirring occasionally, until lightly toasted, about 2 minutes; remove to bowl.
- Melt remaining 1/8 cup Spread in same skillet and add carrots; toss to coat. Pour 1/2 into shallow 2-qt. baking dish. Sprinkle with 1/2 of the cheese and 1/2 of the crumb mixture. Repeat with remaining ingredients.
- Bake until heated through and cheese is melted, about 25 minutes.
My girls loved them and so did my husband and I! Next time I am going to added potatoes and then maybe chicken too!
