Chicken Sausage and Egg Hashbrown Mini Cups Recipe in Five Simple Steps #simplymadeinfive

In most households, weekday mornings are hectic. Somewhere in between showering, walking pets, packing lunch and finding that other shoe, there’s breakfast. Breakfast that’s fast, healthy, hearty and delicious can be a tall order. That’s why breakfast that’s simply made saves the day. Simply Potatoes and al fresco all natural breakfast products are our secret weapons for that simple breakfast we crave.  
 
Try pairing al fresco’s breakfast chicken sausage with Simply Potatoes Hash Browns in breakfast egg cups or breakfast pizza. Simply Potatoes Hash Browns come in flavors like Original, Southwest Style or Garlic & Herb, which pair nicely with al fresco’s Country Style and Apple Maple Breakfast Chicken Sausage links or Chicken Bacon.

Chicken Sausage and Egg Hashbrown Mini Cups

Ingredients:

  • 1  pkg Simply Potatoes O’Brien shredded hash brown potatoes
  • 4 tbsp. melted butter
  • 1 c. shredded Pepper Jack Cheese
  • kosher salt
  • Freshly ground black pepper
  • 10 eggs
  • 1 package al fresco All Natural Roasted Pepper & Asiago Chicken Sausage
  • 1 tbsp. Garlic powder

Step 1:

Preheat oven to 400 degrees F. Grease 2- 12 count mini-muffin tin with cooking spray.

Step 2:

Combine hash browns, butter, and cheese in a medium bowl. Season with salt and pepper. Pour mixture in muffin tin cups, leaving about half for a second batch; press down and up the sides with a spoon to create bowls. Bake until browned and crispy, about 20 to 25 minutes. Let cool slightly.

Step 3:

Meanwhile, Warm chop al fresco Chicken Sausage in the microwave for 30 seconds and then chop into bite size pieces.

Step 4:

In a medium bowl combine eggs, chicken sausage, and garlic powder. Season with salt and pepper. Pour a spoonful of the mixture into the previously baked hash brown cups.

Step 5:

Bake until set, about 10 to 12 minutes more. Serve warm.
