Chicken with curry

Fry coarsely chopped onion in a little olive oil. When the onion takes on a nice golden brown color you can add almonds, whole or halved, as you wish. Fry until the almonds are golden brown too. Cut the chicken white meat into cubes and mix with 2-3 tablespoons of soy sauce, a glass of cognac and 2-3 tablespoons of cornstarch. Stir everything nicely and leave it to stand in the fridge for a while. Chop the vegetables into leaves (carrot, cabbage, cucumber, red and green paprika), and separate the garlic into a separate plate. Put 2-3 tablespoons of oil in a deeper pan and heat until the oil starts to smoke. Add a pinch of salt and garlic to the oil heated in this way, as well as the white meat previously drained from the aforesaid mixture (don’t throw the liquid away!). Finally add the ginger. Since the oil is hot, mix the meat with quick movements and do not fry it for more than 2-3 minutes. Return the fried chicken to the soy sauce in which it was and start preparing the vegetables. Heat the oil you previously added to the deeper pan. Add salt as desired and your chopped vegetables are ready. Fry the vegetables with intensive stirring for a few minutes and gradually add salt, pepper and spicy paprika. After 2-3 minutes of frying, add the fried chicken in it, peanuts, sesame seeds, the rest of the cognac and soy sauce (2-3 tablespoons). Stir vigorously for a few more minutes and when the meat and vegetables are nicely combined, remove from the heat and serve with rice.
Italian pasta with chicken white meat and zucchini
